Different types of fat

The main constituents of fat are triglycerides.

They have a backbone consisting of 1 glycerol molecule with 3 fatty acids attached to it. The fatty acids can be divided into saturated and unsaturated fatty acids.

Most fats contain a mixture of both saturated and unsaturated fatty acids. Unsaturated fatty acids can be divided into monounsaturated, polyunsaturated and trans fatty acids.
